BLANCO/SILVER/PLATA: Clear, unmatured, uncolored, reduced to drinking strength & bottled quickly
REPOSADO (RESTED): Matured for a minimum of 2 months and a maximum of 12 months in American or French oak barrels. Has a pale golden tone and a mellow character.
ANEJO (AGED): Matured for at leasst a year in oak barrels, usually former bourbon or cognac barrels. Somewhat deeper gold in color, and a more balanced more mellow character, with vanilla and more complex, spicy notes on the palette.
TEQUILA: an agave based spirit made primarily in the area surrounding the city of Tequila. Made exclusively from the Blue Agave plant.
MEZCAL: a spirit made from agave plants. Primarily from the state of Oaxoca. Generally refers to all agave based spirits that are not produced from the Blue Agave plant. Commonly associated with "The Worm".
SOTOL: Made from a plant called the Desert Spoon that grows in the wilds of Mexico. Primarily from the state of Chihuahua.
